What’s your favorite cake in the whole wide world? Mine is a Sour Cream Pound Cake with Cream Cheese Frosting. And it’s not that hard to make! Here’s my recipe:
Sour Cream Pound Cake Ingredients:
1/2 pound butter
3 cups sugar
3 cups flour
1/4 teaspoon baking soda
2 teaspoons vanilla
1 8-ounce container of sour cream.
Directions: (Preheat oven to 350 degrees)
-Cream butter. Add eggs and sugar, and beat until mixed well.
-Next add baking soda and vanilla.
-Gradually add flour, and then sour cream.
-Beat 4-5 minutes until smooth.
-Grease and flour pan, and bake at 350 degrees.
–for Bundt cake pan, bake about 1 hour and 15 minutes.
–for two 9-inch pans, back about 40-45 minutes.
-Test cake to see if done using a toothpick. If it comes out clean, it’s ready.
(Always, check cake before the time, and test to make sure it’s never overcooked.)
-After cake is cooked, let sit for 10-15 minutes, and then turn upside down onto a plate.
This cake is so delicious, it doesn’t need frosting. You can top with powdered sugar, fresh fruit, or whipped cream.
Or you could consider a cream cheese frosting! That is almost always my preference. So here is an easy recipe:
Cream Cheese Frosting Ingredients:
-1/2 cup butter
-8 ounces cream cheese
-4 cups (32 ounces) of powdered sugar
-2 teaspoons vanilla
-Cream together butter, cream cheese and vanilla. Mix well,
-Slowly add powdered sugar until smooth.
-To frost two nine-inch circular cakes,
— frost bottom layer top and side.
— Place second layer evenly on top of first layer.
— Frost top layer and side of second layer.
— Fill in spaces between two layers.
— After you have finished frosting the entire cake, run a knife under hot water, and gently smooth all the side of the cake.
It will turn out beautiful if you do all these steps.
I normally don’t bake cakes anymore, but I have family coming to visit this weekend. It was so fun to make this delicious treat for my nephew and his sweetheart to celebrate.
I still have to add the finishing touches tomorrow, but I can’t wait to cut into this masterpiece of a dessert.
